Each month, Kirsty rounds up her favourite recipes for our delectation. This month it's all about the seasonal ingredients and lighter meals.
May was very much a month of two halves for me. I finished up exams a few weeks ago so I've been taking full advantage of having more free time to bake (starting with cookies and cheesecake, neither of which lasted long!). On the other hand, I've also been trying to get back into a routine of meal planning and preparing fresh, healthy meals.
Luckily, the latter has been helped along by the fact that asparagus season is well underway. Asparagus is probably one of my favourite foods (after cake + cheese, obviously) so I've basically been trying to sneak it into everything I cook. There's nothing like a meal made with fresh, seasonal ingredients, is there?
So, to my favourite recipe of the month: Asparagus, fried eggs and pangritata with crispy leeks. This recipe by Rebecca from Figs & Pigs showcases asparagus at it's best - simply cooked, and paired with fried eggs & crispy breadcrumbs for added texture. I enjoyed this for a lazy weekend brunch and can confirm it's every bit as satisfying as it looks.
